We select on taste, authenticity and consistency: everyday lines the crew already knows, and seasonal or imported items when the list calls for them. That includes specialist meat cuts, seafood, free-range poultry, dairy, produce, bakery, bar, herbs and spices, and the dry store. Meat includes premium Wagyu and other hard-to-source cuts alongside classic options. Seafood is built around freshness, proper handling and reliable sourcing. Dietary requirements (including gluten-free, organic and vegan options) are treated as part of the brief, not an afterthought. If something is difficult to find, we enjoy finding it.
